Someone posted a Mango Jam recipe using a Strawberry Jam recipe on an Instant Pot Facebook group, so I’m planning to make one or both – soon.
Fruit Jam
Ingredients
- 1 lb (strawberries or mangoes)
- 1/2 cup sugar
- 2 T lemon juice - my experience is 1 large lemon is 2 T
- For mangoes, add 1/8 t cardamom and a few strands of saffron
Instructions

Put the cut fruit, sugar and lemon juice in the IP liner, and put the lid on it

Wait 30 minutes for juice to be released from fruit

Open the lid and stir them well

IS THE RING IN THE LID? this is always a question for me

Close, seal and press Manual/1 minute to cook

NPR for 15 minutes - if not yet open, release at 15 minutes

Use a potato masher to mash the fruit, or a hand blender

Using sauté mode, boil for 5 minutes to reduce the liquid

Let it cool in the pot before putting in a jar
10
Keep refrigerated
