PRALINES!

I cannot believe I haven’t posted my praline recipe!! So this is it. The pralines I made today for this photo are intended to be chopped up and mixed in my Loch Ness Vanilla Bean ice cream so they aren’t the best example. If I were making them as gifts, I’d add more pecans and be sure to mix them in more evenly in each one!

Ingredients

  • 1 c white sugar
  • 1 c brown sugar
  • 1 c heavy cream
  • 1 c toasted pecans*
  • 2 T butter
  • 1 t vanilla
  • optional 1/4 c cocoa for chocolate pralines
  • optional rum/liquor to taste

Instructions

Boil sugars and cream to soft ball stage (235° F); remove from heat (For chocolate pralines, add cocoa to sugars)

Add toasted pecans, vanilla and butter (and optionally liquor), beat until smooth and loses shine

Drop by spoonfuls onto waxed paper or parchment paper to cool

Notes

*toast pecans in pre-heated 350F oven for 7-10 minutes. You'll probably smell when they are ready. Really enhances the flavor!!
