Canned Salmon Burgers

This is alternately Salmon Patties or Salmon Croquettes, with one difference being size of pattie.

Since I looked at about 5 or 6 different recipes, I’m not going to attribute my recipe to anyone else’s. They’re pretty much the same – you mix drained, canned salmon with a few binding ingredients and some seasonings, form into patties and cook them in a skillet or on a griddle. I wasn’t wowed with my original version – I prefer the salmon burgers I get at HEB really, but this was easier/faster.

First time around, I used bread crumbs instead of crushed saltines, mainly because I had a box of whole wheat bread crumbs at the time. I tweaked this recipe to make it tastier and YUM much better, not just because I used saltines this time but also added the onion/bell pepper.

Canned Salmon Burgers

Ingredients

  • 1 can salmon, drained, flaked
  • 2 eggs
  • chopped onion and bell pepper, maybe 1/4 c each
  • 2 T cornmeal
  • 1/2 t salt
  • 1/2 t garlic powder
  • 2 T mayo (or Greek yogurt)
  • 1/2 t liquid smoke
  • 1 t Tabasco
  • cracker crumbs - I used a small package of saltines, could have used more
  • paprika
  • Oil or butter for the skillet

Instructions

Drain then flake the salmon with a fork

Add eggs, onion, bell pepper, cornmeal, salt garlic powder, mayo, liquid smoke and Tabasco

Mix it all up with a fork or spoon, I used the flaking fork

Add the cracker crumbs and blend it in with your hands - I wore gloves to do this

Form into 4 patties

Refrigerate for 20-30 minutes (this was my attempt to keep them from falling apart, and it worked)

Heat up the oil in the skillet/griddle

Sprinkle paprika on the patties after placing in the skillet

Cook for 2-4 minutes per side

Notes

I made a red/cocktail sauce to serve with - many of the online recipes recommended a dill/yogurt sauce, which would also be good.

Some of the recipes said to remove skin and bones from the canned salmon. I actually tried that but wasn’t successful, especially the bones which are incredibly soft and totally edible, plus they’re a good source of calcium. Eat away. I don’t know how they got the bones out, to be honest, since they just crumble.
