Ginger Orange Syrup + Candied Orange Peels +

Now I’m going to try making a Ginger Orange syrup, also with lemon, and also candy the ginger and the orange and lemon peels. And maybe even dip the orange peels in chocolate?

I’m thinking this syrup will also be good in hot tea and maybe even in a cocktail, or warm with whiskey as a cough syrup. I’m making it for carbonating.

Ginger Orange Syrup + candied fruit peels

Ingredients

  • 1/2 lb ginger root, sliced, not peeled
  • 2 oranges - zest + juice
  • 1/2 lemon - zest + juice
  • 2 c. sugar or combo sugar + stevia
  • 2 c. water
  • melting chocolate

Instructions

slice the ginger pieces

cut the zest from the fruit with a vegetable peeler and slice into smaller pieces

juice the fruit

put the water, sugar, ginger, zest and juice in the instant pot

30 minutes high pressure with a natural pressure release

strain the juice and leave the ginger and fruit draining for 30+ minutes

preheat the oven to 200° F and line baking sheets with parchment

pour the juice into a bottle and refrigerate

spread the ginger and zest on baking sheets lined with parchment

bake for 30 minutes at 200° F to dry out

probably continue to dry overnight

toss in sugar - or dip in melting chocolate

Notes

some candied peel recipes recommend blanching citrus peel 2-3 times in boiling water to remove the bitterness

OMG it’s sooo good, so smooth and sweet and spicy. Amazing!
